For the Fried Chicken:
- 4 bone-in, skin-on chicken thighs (or drumsticks)
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional for spice)
- 1 egg
- 1 tablespoon hot sauce (optional)
- Oil for frying (vegetable or canola)
For the Chips (Fries):
- 3 large russet potatoes, peeled and cut into thick fries
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Oil for frying
Instructions
Step 1: Prepare the Chicken
- In a bowl, mix buttermilk, egg, and hot sauce (if using). Add the chicken and marinate for at least 1 hour (or overnight for best results).
- In another bowl, combine flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
- Remove the chicken from the buttermilk, allowing excess to drip off, and coat it well in the flour mixture. Press the coating firmly to ensure it sticks.
Step 2: Fry the Chicken
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Fry the chicken in batches, ensuring not to overcrowd the pan. Cook for about 12-15 minutes, turning occasionally, until golden brown and crispy.
- Remove and drain on a wire rack or paper towels.
Step 3: Prepare the Chips
- Rinse the cut potatoes in cold water to remove excess starch. Pat dry.
- Heat oil in a pan to 325°F (163°C) and fry the potatoes for 3-4 minutes (this is the first fry). Remove and let them rest.
- Increase the oil temperature to 375°F (190°C) and fry the potatoes again for another 3-4 minutes until golden and crispy.
- Drain and season with salt, black pepper, paprika, and garlic powder.
Step 4: Serve and Enjoy!
- Serve the crispy fried chicken with hot, seasoned chips. Pair with ketchup, mayonnaise, BBQ sauce, or garlic aioli.
Notes
- For extra crispy chicken: Double coat by dipping the floured chicken back into the buttermilk and re-coating with flour.
- Oven-Baked Version: Bake chicken at 400°F (200°C) for 35-40 minutes, flipping halfway. Toss the chips in a little oil and bake at the same temperature for 25-30 minutes.
- Air Fryer Option: Cook chicken at 375°F (190°C) for 20-25 minutes, flipping halfway. Air-fry the chips at 400°F (200°C) for 15-20 minutes.
