  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt

  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional for spice)
  • 1 egg
  • 1 tablespoon hot sauce (optional)
  • Oil for frying (vegetable or canola)

For the Chips (Fries):

  • 3 large russet potatoes, peeled and cut into thick fries
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Oil for frying

Instructions

Step 1: Prepare the Chicken

  1. In a bowl, mix buttermilk, egg, and hot sauce (if using). Add the chicken and marinate for at least 1 hour (or overnight for best results).
  2. In another bowl, combine flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
  3. Remove the chicken from the buttermilk, allowing excess to drip off, and coat it well in the flour mixture. Press the coating firmly to ensure it sticks.

Step 2: Fry the Chicken

  1. Heat oil in a deep pan or fryer to 350°F (175°C).
  2. Fry the chicken in batches, ensuring not to overcrowd the pan. Cook for about 12-15 minutes, turning occasionally, until golden brown and crispy.
  3. Remove and drain on a wire rack or paper towels.

Step 3: Prepare the Chips

  1. Rinse the cut potatoes in cold water to remove excess starch. Pat dry.
  2. Heat oil in a pan to 325°F (163°C) and fry the potatoes for 3-4 minutes (this is the first fry). Remove and let them rest.
  3. Increase the oil temperature to 375°F (190°C) and fry the potatoes again for another 3-4 minutes until golden and crispy.
  4. Drain and season with salt, black pepper, paprika, and garlic powder.

Step 4: Serve and Enjoy!

  1. Serve the crispy fried chicken with hot, seasoned chips. Pair with ketchup, mayonnaise, BBQ sauce, or garlic aioli.

Notes

  • For extra crispy chicken: Double coat by dipping the floured chicken back into the buttermilk and re-coating with flour.
  • Oven-Baked Version: Bake chicken at 400°F (200°C) for 35-40 minutes, flipping halfway. Toss the chips in a little oil and bake at the same temperature for 25-30 minutes.
  • Air Fryer Option: Cook chicken at 375°F (190°C) for 20-25 minutes, flipping halfway. Air-fry the chips at 400°F (200°C) for 15-20 minutes.
