Ingredients

  • 1 cup semisweet chocolate (Passover-approved)
  • 1/2 cup unsalted butter (or margarine)
  • 3/4 cup sugar
  • 3 large eggs
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract (kosher for Passover)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a round cake pan.
  2. Melt the chocolate and butter together until smooth.
  3. Whisk in the sugar, eggs, and vanilla extract.
  4. Sift in the cocoa powder and salt; stir until just combined.
  5. Pour the batter into the prepared pan and bake for 25–30 minutes, or until set in the center.
  6. Let cool completely before dusting with powdered sugar or serving with fresh berries.

Notes

To make it dairy-free, substitute butter with kosher-for-Passover margarine. Pairs wonderfully with raspberry sauce or a dollop of whipped coconut cream.
